In August, we were trying to figure out what type of cake to make for my son's birthday. He's not a huge chocolate fan and doesn't like too much frosting either. He prefers something vanilla and simple. About the same time, I saw a recipe for Classic Pound Cake in Southern Living Magazine. Perfect! I knew he would like it and I had never made a plain pound cake before so I wanted to give it a try. Wow. Sooooo buttery good!
My son declared it the best cake he had ever eaten! He sprinkled powder sugar on his pieces, but I didn't need anything on mine. I was surprised at just how simple pound cake is to make - if you have a stand mixer that is! It would be a LOT more work with a hand mixer. Anyway, here it is...
Classic Pound Cake
4 cups all-purpose flour
3 cups sugar
2 cups butter, softened
3/4 cup milk
6 large eggs
2 teaspoons vanilla extract
Preheat oven to 325 degrees. Grease and flour 10-in. tube pan. Place all ingredients in bowl of 4-qt. heavy-duty stand mixer. Beat on low for 1 minute. Use spatula to scrape down sides of bowl. Beat on medium for 2 minutes.
Pour batter into prepared pan and smooth top. Bake for 1 hour and 30 minutes or until wooden pick inserted in center comes out clean. Cool in pan on wire rack for 10 minutes. Remove from pan and place on wire rack. Cool completely - about 1 hour. Makes 10-12 servings.

Oh Lisa...that looks devine...but is there seriously 2 CUPS of butter in it??? Good Granny Gravy!!! No wonder they call it "pound" cake, LOLOL
ReplyDeletePound cake did get its name from the ingredients used! Traditional pound cake was a pound each of butter, flour, sugar, & eggs! Cut your slice a little smaller and just enjoy I say! :)
