I've been using this recipe for a few years now. I found some versions of the recipe online and altered them a bit - I think the ones online have way too much salt! I didn't want to post this recipe until I actually tried it as a dressing - I mainly use it in recipes that call for a Good Seasons Italian dressing packet. Saves you money *and* you can pronounce all the ingredients!
I finally tried it as a dressing and I would recommend using different amounts according to what you're using the mix for {I'll give you my thoughts below.}.
Homemade Italian Dressing Mix
2 tablespoons dried oregano leaves
1 tablespoon garlic powder
1 tablespoon onion powder
1 tablespoon sugar
1 tablespoon dried parsley
2 teaspoons salt
1 teaspoon ground pepper
1 teaspoon dried basil
1/4 teaspoon dried thyme
1/4 teaspoon celery salt
Mix up and store in an air-tight container. Be sure to label so you don't mix it up with other mixes/herbs! I store mine either in a baggie or in an empty spice jar.
If using as a replacement to make dressing, follow the usual instructions and use about 2 tablespoons of the mixture in place of the packet.
You could also use it in this recipe for Vegetable CousCous Salad - I would use 2 tablespoons of the mix for that. And you can make an easy and delicious chicken recipe - Seasoned Parmesan-Coated Chicken - I only use 1 tablespoon of the mix in that as more seems overpowering.
